“Mandheling” is a term for the blend of wet-hulled coffees coming from the northern half of Sumatra. This region of coffee growing is considered to be the epicenter of one of the world’s most unique coffee terroirs and are typically earthy in balance, and complex. We all at Roos know this because Lobster Butter Love is a magical blend and this Sumatra Mandheling is one of the key ingredients to that magic.
These northern Sumatran farms tend to average 0.5-2 hectares each. Once a batch of coffee has been collected, depulped, fermented overnight, washed clean, and then quickly sun-dried to the touch, the coffee makes its way to the mill. This is where the coffee is mechanically hulled of its parchment, leaving behind just the soft, high-moisture coffee bean (thus earning the term “wet-hulled”), all of which is spread out on large patios to continue drying. Phew! What a process!
