Here's a fun game! Two brothers are fighting over the best way to process coffee.
In one corner is Misael Quintero who believes that coffee tastes better using a barrel fermentation.
In the other corner is Rodrigo Perafan who swears by the air dried method.
Well, we don't know just how testy this argument got, and whether they came to blows, but we do know they eventually split up the family farm.
So now- we get to see who was right: Same trees, same origin: different processing.
This is a delicious double fermented Colombian coffee from farmer, Misael Quintero. Misael and his brother-in-law process the same exact coffee in their own unique ways.
Both brothers double ferment their coffees- in other words, they leave their cherries in the floating tank (under water) for 24-36 hours, pulp and then ferment again.
The other brother-in-law, Rodrigo (who calls his farm, Finca Las Piedras), does the second fermentation on a drying patio for 48 hours, ie. an "aerobic" fermentation.

Let me just say that the Portland dark roast coffee is hands down, one of the best tasting coffees that I've ever had. If you love full bodied dark, rich coffee, you need to try this! It's full flavor is dark without any bitterness, which is what I love. All their coffees are good but this Portland dark roast is a dream come true! And the biggest bonus, it's organic!!! The folks who work are all so friendly and fabulous, always smiling and very welcoming. I give them 10 stars.
You know, there are places and then there are PLACES. Roos is firmly in the all-caps-high-marks-bold-font-jazz-hands category of coffee-roasting-community-space-beverage-bonanaz-you-really-don't-want-to-go-anywhere-else kind of PLACE! High marks for accessibility, welcoming attitude, barista banter, and great music. Oh, and the coffee? It's excellent.
